Homemade Garlic Honey
For gut health and immune support, inspired by Alchemy of Herbs by Rosalee de la Foret:
Smashed cloves from 1-2 heads of garlic + 1/2 cup raw, unpasteurized honey.
Add 1/2 cup cloves to jar with tight fitting lid.
Top with 1/2 cup honey.
Give it a stir.
Close jar and let it sit for a few weeks.
Open up jar every few days for the first 2-3 weeks burp it. Overtime, the honey will become runnier and the garlic flavor will mellow. Both taste delicious with crusty bread, added to a salad or dressing, served with cheese, or in a single bite. Garlic honey will keep indefinitely at room temperature, as it continues to ferment. Use local, organic garlic heads and honey when possible .
